     Tortilla Stack

Ingredients
1 Tbsp. vegetable oil
1 lb. ground beef
1 medium onion, chopped
1 large green pepper, seeded and chopped
1 tsp. cumin
16 oz. black bean and corn salsa
8 flour tortillas
2 cups shredded mexican blend cheese
 

Instructions
Heat oven to 350 F. Heat oil in large skillet over medium-high heat. Add beef, onion, green pepper to skillet and cook; stirring occasionally, for 6 minutes.
Drain fat. Stir in cumin, cook 1 minute. Stir in salsa and heat through; remove from heat; set aside. Coat a 9 in pan with spray. Place 1 tortilla on bottom.
Then top with 1 heaping cup of meat mixture, spreading it evenly and leaving 1 in border around edges. Sprinkle meat with cheese and top with 1 tortilla. Repeat 3 more times.
Place pan in oven for 15 minutes. Let stand 5 minutes before serving.
