     Jiffy Scalloped Corn MMK

Ingredients
1 can creamed corn
1 can whole kernel corn or 1 3/4 cup frozen
2 eggs, beaten
1/2 cup butter or oleo. melted
1 cup sour cream
1 small pkg Jiffy cornbread mix
4 tblsp minced green onion (optional)
 

Instructions
Preheat oven to 400. Spray 8x8 or 9x9 pan with Pam.
Combine corn and eggs. Combine melted butter and sour cream. Add to corn mixture. Add cornbread, mix and blend. Add green onions, if desired. Bake at 400 for 30 min.
NOTE - This does not rise very much, so ok if pan is quite full. The temperature can be adjusted to match whatever you are cooking in the oven. If oven is set at 350, allow about 45 minutes. It should be set in the middle when done. If dinner is delayed, just turn oven lower and let it sit. Freezes well. We sometimes have a Desperation Dinner by thawing leftover corn dish and topping with canned chili. I sometimes mix together everything except the cornbread mix, put in fridge, add cornbread later and cook.
Serving Suggestions
This is true comfort food. Good potluck dish. Tastes ok at room temp.
