1 shallot, grated

8 oz. brick sharp cheddar cheese, grated

4 oz. jar pimientos

Instructions |

|
Grate shallot in food processor. Mix shallot and cheese. Add mayo and stir with a large spoon just until mixture holds together.

Stir in pimientos and some of the liquid. Season with pepper.

Refrigerate, covered, until ready to use. Store up to 1 week.
