Preheat oven to 350. Grease and flour a 9x13 baking pan.
I mixed this by hand in a large bowl. I used leftover baked sweet potatoes, just put them in a mini processor and added some extra orange juice to make them like mashed potatoes

Stir together sugar and oil in large bowl until smooth. Beat in eggs, one at a time; then stir in the vanilla and sweet potatoes. Combine dry ingredients; stir into batter 1 cup at a time, alternating with orange juice; just until everything comes together. Spread evenly in prepared pan.

Bake for 35 minutes in preheated oven, or until knife inserted into center comes out clean. Cool completely before frosting or serving. If using Cool Whip, cake must be stored in refrigerator
Cool Whip Frosting- Mix pudding and milk. Fold in Cool Whip.
I added a tsp of lemon curd and a tblsp of frozen orange juice concentrate to the frosting...and garnished with orange zest.

NOTE-Very moist cake..probably can use canned sweet potatoes? I baked it for 40 min. My husband doesn't like sweet, so check sugar for your taste...and add 1/4 to 1/2 cup more? Cake freezes well. Original recipe called for 1/2 cup beer, but orange juice sounded better to me.
