     Lin's Carrot Cake (21 pts)

Ingredients
2 cups brown sugar
1 1/4 cup oil
4 eggs separated
3 cups grated carrots
2 cups flour
2 tsp baking powder
1 tsp salt
2 tsp baking soda
3 tsp cinnamon
 
1/2 tsp all spice
1/2 cup chopped walnuts
Icing-
8 oz cream cheese
1 lb icing sugar
4 tbsp butter
2 tsp vanilla

Instructions
Bake in 2 - 9 inch pans at 350 degrees for 30-35 minutes Combine oil and sugar, then beat in egg yolks. Add raw grated carrots Fold in sifted dry ingredients and nuts. Fold in stiffly beaten egg whites.
While the cake is cooking combine and mix all the ingredients for the cream cheese icing. Let the cake cool then ice and serve
