Preheat oven to 350. Combine eggs, oil and sugar. Beat until fluffy. Fold in zucchini and 1 tsp of vanilla. Add remaining ingredients and mix well. Pour into two greased and sugared loaf pans. Bake for about 1 hour or until toothpick inserted in middle comes out clean.
