Ingredients
1 pound ground beef
Cumin
1 Cup Sour Cream
Chopped green onion
1 and 1/2 cup of shredded cheddar cheese
cayanne
pepper
6 corn tortillas
Enchilada sauce (canned)
 

Instructions
Cook ground beef and add Cumin to taste.
Separate bowl mix sour cream, chopped green onions, cheddar cheese, 1/4 t. cumin, 1/4 t. cayenne, and 1/4 t. pepper. Add this sour cream mixture to ground beef in a separate bowl.
Fry corn tortillas for 5 seconds on each side to firm. Once fried, fill tortillas with sour cream and ground beef mixture and roll.
Place in bake ware and cover with enchilada sauce. Bake at 350 for 15-20 minutes.
