     Mexican bean and quinoa salad

Ingredients
2 cups cooked quinoa, cooled
1 (15 oz) can black beans
2 cups whole kernel corn (frozen or canned)
1 small red onion, diced
1 red pepper, diced
1 lime, zested and juiced
1/4 cup chopped cilantro leaves
1 tsp minced garlic
salt to taste
 

Instructions
In a large salad bowl, combine the quinoa, beans, corn, onion, pepper, lime zest and juice, cilantro and garlic. Lightly toss all ingredients to mix well and sprinkle with salt to taste. Refrigerate for 1 hour, toss and serve.
