Place puff pastry on work surface and spread with mustard. Arrange prosciutto over and sprinkle with parm. Lightly press the cheese into the prosciutto with a rolling pin.

Starting at long edge, roll the puff pastry to the middle of the dough, then do the same with the other edge, making two rolls that meet in the center. Cut double rolls crosswise into 1/2 inch slices.

Place on a cookie sheet lined with parchment, press lightly to flatten, refrigerate 10 min. Preheat oven to 400.

Beat egg and water together in a small bowl and brush palmiers with mixture. Bake about 10 min. Serve hot or at room temp.
