     Curried Duck Salad

Ingredients
1 cup good-quality mayonnaise
2/3 cup chutney, pureed
8 teaspoons good-quality curry powder
1 teaspoon white vinegar
Diced meat from 2 roast ducks
2 large celery ribs, peeled and finely chopped
1 small onion, finely chopped
2 apples, diced
1/4 cup sliced almonds, toasted
 
Salt and pepper to taste
2 1/2 teaspoons fresh lemon juice
8 teaspoons honey

Instructions
Combine mayonnaise, chutney, curry powder, lemon juice, honey and vinegar in a large mixing bowl. Blend well
Add the duck, celery, onion, apples and almonds. Toss well.
Season with salt and pepper.
Refrigerate at least 2 hours before serving
