Mix the couscous, olive oil, mint, parsley and raisins together till
distributed evenly. Add the stock, cover and let sit for 5 minutes.
Meanwhile, heat pan and add the olive oil, garlic and chili. Fry for 1
minute (to infuse the oil). Add the halloumi and courgette and fry
till halloumi is golden on both sides (2-3 mins). Then add the red
onion and lightly toss for 1 minute.
Remove halloumi mixture from the heat and add to couscous (once
5 mins is up). Add the tomatoes and squeeze of lemon and then eat
it in your fat face --)
