cut fish in 1/4 inch squares, cover with lemon, lime and oil vinegar
mix. chill for 3 hours, then drain juice aside. add cilantro shallots
and peppers, then re add the juice. chill for 2 more hours. then add
tomatoes, avocado and cucumbers, little salt on veggies and fold in,
chill for 1 more hour.
