     Mutton Curry

Ingredients
2.2 lbs = 1 kg mutton
For marination-
Ground Ginger, ground Garlic
.5 tsp salt, pinch of sugar, pinch of turmeric, a tsp of vinegar if reqd.
1 tsp lime juice or lemon juice
To be ground-
a small bunch of cilantro leaves
a few mint leaves
2 tomatoes
 
1 tsp kuskus
1 tsp rai (mustard seed)
1-1/2 tsp jeera powder
1 tsp corriander powder
1/2 tsp pepper powder
1/2 tsp garam masala
4 red chillies
2 small onions cut
1 small onion for boiling with the mutton, 2 potatoes quartered

Instructions
In a cooker, fry 1 onion and boil the mutton (1 or 2 whistles)
Roast the masala that needs to be ground. Grind the masala. (soak in some water for a few minutes to make grinding easy) In a pan heat oil and add a pinch of sugar. Then fry the ground masala
Add the boiled mutton and let it simmer. Don't add additional water. Add only if required.
Add potatoes and let them cook in it. Add salt and vinegar per taste. ( 1 tsp of each, if reqd)
