10 oz. romaine salad

2 tomatoes, cut into wedges

1 oz. grated fresh Parmesan cheese

Dressing-

6 T. light mayo
|
|
3 T. fresh lemon juice
|

1 1/2 T. water
|
|
1 1/2 t. anchovy paste
|
|
3 garlic cloves, minced
|
|
1 t. dried oregano
|
|
1/2 t. pepper

Instructions |

|
Prepare grill to med-high heat. Combine all dressing ingredients. Reserve 1/3 C. dressing in bowl; set aside.
|

Grill chicken until done, basting frequently with remaining dressing. Cool and slice.
|
|
|
Combine chicken, reserved dressing, lettuce and tomato in large bowl; toss to coat.
