Preheat oven to 375.
In medium bowl mix flour, baking soda and salt.
In a seperate large bowl mix butter, brown sugar, sugar, egg, and vanilla.
Open all of the mini peanut butter cups from a 12 oz package (I use more) and place on a cutting board. With a chef’s knife chop them up and then fold into mixture.
Drop tablespoon sized mounds of dough on an ungreased cookie sheet. Bake until light brown around the edges. Transfer to a baking rack to cool.
Cook on 375 for 11-12 minutes. Cool on sheet for a minute or two before transferring to cooling racks. If cookies are crisp, store with a piece of bread in the container to soften them up.
