     Mushroom Gravy

1 large shiitake mushroom
1/2 onion, sliced
1 small carrot, chopped
2 T tamari
1 C sliced fresh mushrooms
2 tsp oil
1 T arrowroot powder or other thickener, dissolved in cold water

Simmer the shiitake, sliced onion, carrot and tamari in 3 C water for 10 minutes or more. Remove shiitake, slice fine (discarding stem), and replace. Saute fresh mushrooms in oil and add to the stock. Add dissolved thickener and simmer, stirring constantly, until liquid is clear and slightly thickened.
