     Irish Soda Bread

Ingredients
¾ cup seedless raisins
1 tsp salt
2 cups sifted, all purpose flour
½ tsp baking soda
1 tbsp granulated sugar
1/3 cup solid shortening
2 tbsp baking powder
1 tsp caraway seed
1 large egg
 
1 cup sour milk

Instructions
Rinse and drain raisins. Sift together flour, sugar, baking powder, salt and baking soda. Cut in shortening. Stir in caraway seed and raisins.
Beat egg slightly and add sour milk to beaten egg. Stir egg and sour milk into dry mixture, blending only until all of the flour is moistened. Turn into greased 8 inch round baking dish/pan.
Bake in a 400-degree oven about 30 minutes.
Take care to stir the batter only until the flour mixture is moistened. The characteristic coarse ground feathery texture is ruined with over mixing. To reheat in oven - spread with butter and heat for 10 minutes in moderate oven. Cut in wedges before toasting. Sour milk = 2 tbsp lemon juice or vinegar in 1 cup milk. 1/3 cup = 5 tbsp - 1 tsp.
Serving Suggestions
Cut into wedges and serve hot with butter or jam.
