     Vegetable Couscous

350g dried couscous
500ml vegetable stock
2 lemons
1 tsp lazy garlic
1 red onion
1 green pepper
Handful of cherry tomatoes

Soak couscous in stock for 5 minutes.
Add juice of two lemons and garlic.
Stir in chopped veg. Season to taste.
As a variation with extra protein, try adding beans or chickpeas.
Serving Suggestions
With a side salad, or with pitta bread and hummous.
