     Moms Enchilladas

Ingredients
Tortillas
8 oz Sour Cream
1-2 cans Cream of chicken/ mushroom/ celery
Cooked chicken breast (boiled is best)
1 can Green chilies
Pepper jack cheese
(I always double sour cream, cheese, and cream of soup)
 

Instructions
Cook chicken (I use 1/2 breast per amount of people) Mix together sour cream, chilies, cheese, cream of mushroom. Take half of the mixture and set aside (it will go on top)mix chicken and cheese in one of the bowls. Put mixture into tortillas and line pyrex dish. Put other half of sour cream, cream of, and cheese on top of tortillas. sprinkle with pepper jack cheese. Bake at 350 until heated all the way through about 45 min
To thicken the inside of the enchiladas i add brown rice to the mixture. Served with a slice of avocado on top is delicious!
