Preheat the oven for 180C.
Defrost the spinach and drain all the water. Set aside.
Cut red onion into thin rings and fry in coconut oil. Add salt. Set aside when doen.
Whip the eggs.
Add the coconut cream to the egg mixture and whip.
Add the salt and pepper.
Add spinach and mix.
Add most of the onions to the mix but set aside a few to decorate the top.
Optional -Add cheese or mix of cheeses to the mixture.
