     Dairy Free Spinach Quiche

Ingredients
1/2 a bag of frozen spinach
5 eggs
1/2 can of coconut cream
1 red onion fried
Salt and Pepper to taste
Coconut Oil to fry onion and oil pan.
Optional - add 1/2 cup of goat cheese, yellow cheese or bulgarian cheese
Optional - Substitute spinach for broccoli
Optional - Herbs
 

Instructions
Preheat the oven for 180C. Defrost the spinach and drain all the water. Set aside. Cut red onion into thin rings and fry in coconut oil. Add salt. Set aside when doen. Whip the eggs. Add the coconut cream to the egg mixture and whip. Add the salt and pepper. Add spinach and mix. Add most of the onions to the mix but set aside a few to decorate the top. Optional -Add cheese or mix of cheeses to the mixture.
Oil a round quiche pan. Put the mixture in the pan.
Bake for 30 minutes or until golden brown and firm.
