     Crock pot India's Carnitas

Ingredients
3 lbs boneless pork shoulder
1 T canola
1 tsp salt
1 orange , well washed
1 c whole milk
2 c water or low sodium beef stock
1 tsp fresh ground black pepper
2 tsp cumin or more to taste
2 cloves of garlic, chopped
 
Sour cream sauce
8 oz light sour cream
juice of 1 lime
1 tsp cumin

Instructions
Cut pork in 6 to 8 pices. Heat oil in heavy dutch oven just large enough to hold meat in one layer. Brown meat on all sides and season with salt.
Squeeze the orange over the meat and toss the rind into crockpot. Pour milk ovver the meat and add enough water or stock to almost cover meat. Sprinkle with pepper and cumin.
Cook on low until meat shreds easily 6 to 8 hours.
Garnish with sauteed onions, with garlic and japs and the very tasty sour cream sauce served on warm torillas.
