     Nik's Pasta Sauce

Ingredients
8 lbs. lean groud beef
8 pepperettes or 2 cups sliced pepperoni
6 large white onions
4 red, green, orange and or yellow peppers
8 celery stalks
3 whole heads of garlic
10 19 oz. cans chunky stewed tomatoes
2 bottles HP sauce
2 bottles Heinz 57 sauce
 
½ cup Worcestershire sauce
salt, pepper, oregano, basil, thyme, bay leaves
red pepper flakes
fresh mushrooms
¼ cup sugar (optional)

Instructions
This makes a huge batch because I like to freeze some for use later. I also use this sauce as a base for chili, just add beans and more spices.
I blend about ¾ of the tomatoes in a food processor. I use 3 cans of diced tomatoes as is for a bit of chunk. Add all spices, (to taste.) Add diced up veggies and mushrooms. Add cut up pepperettes to sauce.
Cook ground beef and drain well before adding to sauce. Let sauce simmer at low heat for several hours, until the veggies are tender.
Serving Suggestions
Garlic bread, crusty rolls, nice side salad.
