     Penne ala Vodka

Ingredients
1 lb Whole Wheat Pasta
1/2 cup vodka (unflavored)
2 cups light cream
2 tbsp margerine
2 cloves of garlic
1/4 cup minced white onion
1 tbsp fresh basil chopped
1 1/2 tbsp salt
1 tsp black pepper
 
1 pinch of crushed red pepper
3 tbsp tomato paste
2 tsps olive oil
1 cup of freshly grated parmesan cheese

Instructions
Boil water for pasta. Be sure to add salt to the water. Cook pasta as package recommends less 1 -2 minutes pastsa should be aldente. Drain and set aside.
While pasta is cooking, take butter or margerine and olive oil and place in large skillet over medium heat. Once butter has melted add onion and garlic and sautee until translucent (about 2 minutes.)
Add tomato paste, light cream, vodka & red pepper flakes to pan and turn to medium high. Stir until sauce is well blended and turns an orangey/pink color. Add parmesan cheese, salt, pepper, and crushed red pepper. Stir frequently until sauce thickens (about 3 - 5 minutes.) Add fresh chopped basil and reduce heat to low.
Add pasta to skillet and stir to coat all the pasta in the sauce. Let cook 1 - 2 minutes on low. Serve and enjoy!
Serving Suggestions
I like to serve with fresh made garlic bread and a green salad.
