     Avocado- Potato Soup

Ingredients
1/4 cup margarine
2 cup chop onion
2 TBS flour
1 cup chicken broth
4 med potatoes, cooked and cubed
1 tsp salt
pinch pepper
3 cup milk
3 eggs
 
1 (3oz) pkg cream cheese at room temp
1 avocado peeled and sliced
1/2 lb shrimp cooked and cleaned- optional

Instructions
Melt margarine in saucepan. Add ionion and saute on med heat about 10 min (until golden brown). Stir in flour and cook for 1 minute. Remove from heat and gradually add chicken broth. Return to heat and cook, stirring constantly, til mixture boils and thickens. Add potatoes, salt and pepper
Simmer 20 minutes. Put mixture thru a sieve or puree in blender till smooth. (Preparation up to this point may be done in advance). Return potato mixture to saucepan. Add milk and reheat.
Beat eggs and cream cheese together. Gradually add to potato mixture, beating constantly until just combined.
Before serving add avocado and shirimp
