To prepare chili- Brown the beef and sausage in a large Dutch oven. Remove the meat and reserve. Drain off the fat, reserving about two tablespoons and discarding the rest.
Saute onions and garlic until translucent, about 8 minutes. Add the cumin, paprika and chili powder and cook for 1 minute. Add tomatoes, water, sausage and beef, stir and simmer for 90 minutes. Rinse and drain beans and add to the pot and simmer for 30 minutes.
To serve chili- Ladle into bowls, add garnishes and serve.
