Combine all dry ingredients in mixer. Add butter and mix long enough to incorporate, then add egg. Dough is ready when it starts to become a mass.
Roll into small ball and place on cookie sheet. Slightly press down on each ball.
Bake at 375 for 9-11 minutes, rotating once.
Allow to cool completely on wire racks.
For Filling- Mix butter and shortening until it's smooth. Gradually add powdered sugar. Add vanilla and mix until light and fluffy.
Pipe or use spoon to put filling on one cookie, then press another cookie onto it to make a sandwich.

Suggestions
Lilly added red food coloring to the filling to make pink. Cookies came out larger then expected, so smaller balls work better.
