     Healthy Fried Rice

1 cup of whole wheat minute rice
1 cup of water
3/4 cup of chopped carrots
1 cup of broccoli
Olive Oil
1 egg mixed with 2 egg whites
1/2 cup of snap peas

Steam rice in boiling water as directed and place chopped up garlic clove in pot as rice pressure cooks.
In hot frying pan, drizzle oil and chopped garlic (use at your own discretion) add vegetables and mix together. Pour in steamed rice after vegetables have become tender and add eggs and continue to mix together until the egg cooks.
Add olive oil and salt and pepper for taste.
