     Lemon Cornmeal Cake

Ingredients
~Cake~
1 1/2 cups of plain flour
1/3 cups of yellow cornmeal
1/2 cup of granulated sugar
1/4 cup of brown sugar
3 teaspoons of baking powder
1/2 teaspoon of baking soda
1/2 teaspoon of salt
1 cup of buttermilk
 
2 large eggs
1 tablespoons lemon zest
1/2 cup - 1 tablespoon unsalted butter, melted until brown then slightly cooled
~Glaze~
1 1/2 cup of powdered sugar
3 - 4 tablespoons of fresh lemon juice

Instructions
Place a rack in the center of the oven. Preheat over to 175 Celsius. Butter and flour a 9 inch round cake pan.
In a large bowl combine flour, cornmeal, sugars, baking powder, baking soda & salt. In another bowl whisk together eggs, buttermilk, lemon zest & melted butter. Add wet ingredients to the dry ingredients, fold together with a spatula. Fold until very few lumps remain. Pour batter into the pan and place in oven. Bake for 30 minutes or until a skewer inserted into the centre, comes out clean.
Remove from oven, and let cool for ten minutes. Use a skewer or fork to poke holes in the cake. Whisk together powdered sugar and lemon juice. Pour the glaze over the cake, spread evenly and let rest for 30 minutes before serving.
This cake will last up to 4 days, well wrapped, at room temperature.
