     Black Bean Cheeseburgers

Ingredients
2 cans (15oz) black beans, drained, rinsed
2 scallions finely chopped
1/2 red pepper, chopped
1 TBS dijon mustard
1 jalepeno pepper, chopped, optional
1/2 tsp salt
1 egg yolk
1/4 cup canola oil
6 whole wheat hamburger buns
 
6 slices sharp cheddar or monterey jack cheese

Instructions
Combine beans, scallions, red pepper, mustard, jalapeno, salt, and egg yolk. Mash beans until all ingredients are incorporated but not smooth paste; you want to see some of the whole beans. Cover refrigerate 45 minutes.
Shape cold mixture into patties; they will be sticky and a bit loose. Handle gently.
Heat skillet. Add oil. Saute burgers 2 minutes. Turn over carefully and saute 2 more minutes. Turn patties over one more. Add cheese. Cover adn cook 1 minutes.
