     Laksa Paste

Ingredients
1 red onion, finely chopped
2 tablespoons ginger, chopped
4 whole cloves
1 teaspoon turmeric, chopped
1 stalk of lemongrass, chopped
10 dried chillis
6 macadamia nuts, chopped
1/2 teaspoon shrimp paste
1 bunch coriander roots and stems
 
10 vietnamese mint leaves
1 teaspoon coriander seed
1 teaspoon fennel seed
4 whole cardamon pods
1 teaspoon cumin seeds
4 cloves garlic, chopped
1/2 teaspoon cinnamon
Vegetable oil to cover paste to seal flavour

Instructions
To keep- Blend all ingredients in a blender, cover with oil, refrigerate for up to a month.
To Use- Place all ingredients in hot pan with oil, cook until fragrence is released. Add meat, vegetables and coconut cream. Simmer 20 minutes, serve over noodles or rice.
