     Rhubarb Compote

2 lbs rhubarb in 3-inch pieces
1/2 c sugar
1/2 c white wine
1 vanilla bean, split
Variation- Use zest/juice from 1 large orange in place of wine

Set a rack in lower third of oven and preheat to 350
Put rhubarb in a dutch oven or other deep oven-safe pot. Add sugar, wine, vanilla, and mix.
Bake uncovered for about 30 minutes, stirring midway to ensure even cooking.
Serving Suggestions
Warm or cold, plain or with yogurt or ice cream
