In medium pot melt butter& oil over med-high heat. Add giblets, cook & brown for 5 min. Add onions, carrots, celery & garlic, saute an additional 5 min. Add flour, stir 1 min.
Deglaze pan with wine, stirring to incorporate any brown bits from bottom. Add broth, tyme & pan drippings, cook stirring constantly until thickened.
Strain solids out into another pot & continue to cook for 5-10 min on med-low heat. Adjust seasoning with salt & pepper to taste.
