Combine four, milk, sugar, yeast, and salt in bowl of stand
mixer; mix on low 10 seconds using paddle attachment.
Microwave water and shortening until shortening is melted (120-
130 degrees F, 2ish minutes) Add water mixture to other
ingredients and mix on medium speed for 3 minutes stopping
halfway to scrape sides. Cover bowl with plastic wrap and
refrigerate overnight.

Next Day. Remove dough from fridge, uncover, and mix on
medium speed for another 3 minutes. In the meantime, place 8
rings on cookie sheet and spray. Sprinkle some oats in the
bottom of each. Scoop dough with ice cream scoop evenly
between rings, and sprinkle the tops with more oats. Cover with
parchment and let sit in a warm place for 60 minutes.
