Preheat waffle iron. Preheat oven to 210-220.

Add dry ingredients into a large bowl.
Separate eggs.
Add white sugar to egg whites.
Combine Wet ingredients (including yolks) into a different bowl.
Combine oil into a small bowl (ensure coconut oil is in a liquid
state, you may have to heat it for a couple of seconds, do not add
directly to the cold milk. It will cause the coconut oil to
solidify).

Beat egg whites and sugar until until stiff peaks.
Mix wet and dry ingredients and the oil until just smooth.
Fold in egg whites.

|
Set waffle iron to a lighter setting.
Cook waffles according to waffle iron directions.
Waffles will feel a little soft coming out of the waffle iron.
Remove waffle and place waffle into oven on the rack.
Waffles will crisp in oven until ready to serve.
