Ingredients
1/2 pkg. yeast
1/2 tsp salt
1 egg, beaten
1/2 tsp sugar
1/2c. warm water
flour to make a medium dough
 

Instructions
Let dough rest for 1 hour. Separate dough into portions that you can handle. Roll out dough as thin as possible. Spread with shortening. If possible let rest at least 1/2 hour. With greased hands, stretch the dough to paper thiness.
While the dough is still lying on the table stretch the outside area. Pick the dough up and stretchit by pulling the sibes of your hands. The dough will tear easily at this stage. After stretching, lay the dough on a lightly floured surface. Roll stretched dough as you do a jelly roll. Then cut into smaller pieces. While your dough is resting you should pare and dice 2 or more potatoes. Put 2 TBS shortening in an electric fry pan or roaster. Andd enough water to just cover the potatoes. Add salt to taste. After strudels are stretched and cut, add to potatoes and cook with a tight cover on the pan. Cook for about 20 minutes or until you can hear them fry, remove lid turn and fry on both sides. Be sure not to open the lid while cooking.
