Melt butter in saucepan large enough to fit all ingredients. Remove from heat and stir in sugar. sift flour, b.p, and ground ginger until all combined.
Press into a square tin, lined with baking paper. Bake at 180 for 20 minutes. Ice while warm and cut. Sprinkle with chystallised ginger.
Icing
Melt butter and golden syrup, mix in ginger and enough icing sugar to spread.
