     Lemon Syrup

Ingredients
Juice and grated rind of 6 lemons
2 1/2 lb sugar
1 tsp ginger
1 oz citric or tartaric acid
2 pints boiling water
 

Instructions
Grate rind off the fruit, squeeze the juice, pour over the sugar and ginger, then pour over the boiling water and mix until dissolved. Pour into bottles - sterilised - and keep. Will last for ages!
