mix half the sugar with the flour; add the egg yolks, lemon juice, and rind, mix smooth, then gradually add the milk.
Beat egg whites until stiff, then slowly add in the rest of the sugar while beating, until dissolved. Combine the two mixtures - fold carefully.
Grease the baking dishes well - you can use one large dish or small ramekins. Spoon the mixture in to about 3/4 level. Place the baking dishes (or dish) in an oven dish with hot water.
Bake in a moderate oven for about 40-45 minutes.
