     Zesty Crab Nachos

Ingredients
1 package (8 ounces) imitation crabmeat, coarsely chopped
1/4 cup thinly sliced green onions with tops
2 tablespoons snipped fresh cilantro
1 lime
1 cup (4 ounces) shredded Mexican cheese blend
1 teaspoon chili powder
1 teaspoon ground cumin
1/2 teaspoon red pepper flakes
1 avacado, peeled, seeded, and diced
 
1/2 package (13.5 ounces) round tortilla chips (about 8 cups)
Sour cream (optional)

Instructions
Preheat oven to 375 degrees. Coarsely chop crabmeat. Thinly slice green onions, Snip cilantro, zest lime (measure 1 tablespoon of juice). In bowl, combine crabmeat, green onions, cilantro, lime zest, cheese, chili powder, cumin, and red pepper flakes. Mix well.
Cut avocado in half lengthwise; remove seed and dice flesh. Place avocado into bowl; add lime juice. Mix gently and set aside.
Arrange tortilla chips in an even layer. Sprinkle crab mixture evenly over chips. Bake 8-10 minutes or until cheese is melted. Remove from oven; top with avocado. Serve immediately with sour cream, if desired.
Cook's Tip- The crab mixture can be made several hours in advance. Cover and refrigerate until read to use. Chopped, cooked shrimp can be substituted for the crabmeat, if desired.
