     Pumpkin & Apple Soup w Black Walnuts (4pts)

Ingredients
1/4 cup butter
3 cups chopped onion
6 cups chopped pumpkin (or butternut squash)
2 cups peeled & chopped Spy apples
1 tsp brown sugar
pinch ground cinnamon
pinch ground allspice
pinch cayenne
1 tsp salt
 
5 cups vegetable broth
salt & freshly ground pepper to taste
Garnish
2 tbsp roasted black walnuts
apple slices
Sage Leaves

Instructions
In a large pot, melt butter over medium heat. Add the onion a cook until softened, about 3 minutes. Add the pumpkin and apples and cook until softened, another 3 minutes. Add brown sugar and spices, then pour over the water or stock and simmer for 30 minutes.
Remove for heat, blend until smooth with a hand blender or in a food processor. Season to taste with salt and pepper.
To garnish grill or pan sear some apple slices and add roasted black walnut (oven roasted in a dry pan @ 350 degrees for 5-6 minutes and sage leaves
