     Carrot Faux Cheese Sauce

Ingredients
6 carrots, peeled and sliced into ½-inch rounds (yield 3 cups)
1 cup evaporated skim milk
1/2 cup water
2 teaspoons Dijon mustard
1 teaspoon Worcestershire sauce
2 tablespoons freshly squeezed lemon juice
1/2 teaspoon salt
1/8 teaspoon cayenne
1/8 teaspoon cumin
 
1/8 teaspoon smoked paprika
Garnish- 1/4 cup freshly grated Parmesan cheese

Instructions
Cook the carrots in the evaporated milk and water, covered, in a medium saucepan, 10-15 minutes or until very soft. Add mustard, Worcestershire sauce, and lemon juice to the pot and mix with an immersion blender for 2-3 minutes or until smooth and glossy. Add the salt, cayenne, cumin and paprika, and whiz to mix.
Garnish with cheese and dusting of smoked paprika.
Serve over steamed cauliflower or baked potatoes or noodles.
