     DIY Corn Muffin Mix

Ingredients
6 cups flour
1 cup sugar
4 cups cornmeal
1/4 cup baking powder
1 Tbsp salt
2 tsp cinnamon
 
Instructions
Whisk together all ingredients and store in airtight container. Makes enough mix for 5 dozen muffins.
To make 1 dozen muffins- whisk 1 cup milk, 2 eggs, 4 Tbsp melted butter and 1 tsp vanilla into 2 1/4 cups muffin mix until blended.
Transfer to a greased muffin tin and bake at 400 degrees for 15 minutes.
