     Curried Sweet Potato & Chickpea soup

Ingredients
11/2 T canola oil
1 1/2 C sliced onion
2 C chopped green pepper
1 1/2 T curry powder
1/2 T cumin
1/2 tsp salt, divided
1 quart vegetable broth
4 C peeled cubed sweet potato
1 can (19oz) unsalted chickpeas (drained)
 
1 C light coconut milk
1/4 C cilantro
3/8 tsp black pepper

Instructions
Heat oil in large pot over medium heat. Stir in onion and pepper. Cook for 8 minutes or until tender
Stir in curry powder, cumin, 1/4t salt; cook 2 mins. Add veg. broth and sweet potatoes, bring to a boil. Reduce heat, cover, and simmer until tender. (15 mins)
Remove 1 C of sweet potatoes and mash w/ fork. Stir mashed potatoes back into pot, bring to boil. Reduce heat and boil gently for 5 mins to allow mixture to thicken.
Stir in chickpeas, coconut milk, cilantro and pepper. Cook for 1 to 2 mins until warm. Stir in remaining salt.
