     Citrus Semifreddo

Ingredients
3 tbsp unsalted butter, melted
1/3-1/2 c plus 2 tbsp sugar
8 large egg yolks
1/4 c lemon juice
3 tbsp lime juice
2 tbsp limoncello
pinch of salt
zest of 1 lime and 1 lemon
1 c whipping cream
 

Instructions
Spray a loaf pan or pie pan with nonstick spray. Line the pan with plastic wrap allowing excess to hang over sides. (This is the time to add crust if you want it by mixing some crushed up ginger cookies and butter and pressing it into pan)
Whisk 1/3-1/2 c of the sugar, the egg yolks, lemon and lime juice, limoncello, and salt into large metal bowl to blend. Set the bowl over a saucepan of simmering water and whisk the mixture until its thick and creamy and thermometer reads 160 degrees. Cool completely.
Using an electric mixer beat the cream and leftover sugar in another large bowl until stiff peaks form. Using a large rubber spatula fold together whipped cream and custard. Spoon the mixture into prepared pan and fold the extra plastic wrap over the top. Freeze until frozen and set (might also be good with toasted almonds on top)
