1 lb sweet potates, peeled and cut into 1 inch pieces
1/4 c red wine vinegar
1 tbsp spicy brown mustard
1 1/4 tsp salt
1/2 tsp pepper
1/2 c mayo
1/4 c milk
2 celery ribs, diced
1 small red onion, diced
1/3 c minced fresh parsely
Instructions
Place the red potatoes in a large saucepan and cover with water, bring to a boil. Reduce heat, cover and cook for 2 mins. Add sweet potatoes, return to a boil. Reduce heat, cover and cook 6-8 mins longer or until potatoes are fork tender. Drain.
In large bowl, whisk the vinegar, mustard, salt and pepper. Add potatoes to vinegar mixture and stir gently to coat. Cool.
In a small bowl, combine mayo and milk. Stir in celery, onion and parsley. Gently stir into cooled potato mixture. Cover and chill.
