     GF Oatmeal Raisin Cookies

Ingredients
1 & 1/2 cup Gluten free all purpose baking flour
3 cups oats
1 cup butter softened
1/2 cup dark brown sugar
1/2 cup golden brown sugar
1 tsp vanilla (Wilton's)
1 tsp butter flavoring (Wilton's)
1 tsp baking soda
1/2 tsp sea salt
 
1 tsp cinnamon
2 large eggs
1 tsp Xanthan Gum
1 cup raisins
1 tsp honey

Instructions
Preheat oven to 350. Combine butter and sugars. Beat until smooth. Add vanilla, butter flavoring and eggs. In a separate bowl mix together flour, cinnamon, baking soda, salt, and Xanthan gum.
Add flour mix to already blended sugars and butter. Next add honey and blend. Then mix in oats and raisins.
Drop by teaspoons on to a cookie sheet lined with parchment paper about 2 inches apart. Bake for about 10 mins until mixture has turned to brown before removing from the oven.
Allow to cool for five minutes on cookie sheet. Then slide parchment paper with cookies still in place to the counter top. May also remove cookies to a wire rack.
