     Warm Asparagus Spinach Salad

Ingredients
1 1/2 lb fresh asparagus, cut into 1 inch pieces
2 Tbsp plus 1/2 cup olive oil
1/4 tsp salt
1 1/2 lb uncooked penne
3/4 cup chopped green onion/scallion
6 Tbsp white wine vinegar
2 Tbsp soy sauce
1 package fresh spinach
1 cup coarsely chopped cashews
 
1/2 cup shredded parmesian cheese

Instructions
Place asparagus in 13x9 dish. Drizzle 2 Tbsp olive oil, sprinkle with salt and bake uncovered at 400 for 20 to 25 minutes. Stir after 10 minutes.
Cook pasta according to directions. Drain water.
Combine onions, vinegar, and soy sauce in a food processor and process. Gradually add 1/2 cup olive oil.
In large bowl, combine pasta, spinach, asparagus. Drizzle dressing and toss. Sprinkle cashews and parmesian cheese on top.
