     Vegetable Soup

Ingredients
1 Tbsp olive oil
1 Tbsp butter
1 onion
2-3 carrots
2 can green beans, drained
4 cups chicken broth
1 can tomato sauce
1 Tbsp minced garlic
3 cups water
 
6 red potatoes or 2 cans of new potatoes, cut into small pieces
2 cans corn, drained
salt and pepper
1 zucchini, cut into small pieces

Instructions
Chop up onion, carrots and potatoes into 1/8ths. Heat butter and olive oil on medium in soup pot. Saute onion, garlic, carrots, zucchini, and green beans. Add chicken broth, water, and potatoes. Season with salt and pepper. Bring to a boil, cover and reduce heat , cook at a gentle boil until potatoes are tender. Simmer until ready to serve.
Top with monterey jack cheese. Add sliced grilled chicken for a different version.
