     BANANA BREAD

Ingredients
4-5 ripe bananas
1 cup sugar
1/2 cup applesauce (I use the unsweetened kind)
1 tsp vanilla
2 eggs (or liquid egg substitute)
1 tsp baking soda
1 Tbsp baking powder
1 tsp salt
2 cups flour
 
1 tsp cinnamon
1/2-1 cup nuts (optional)
1/2 cup mini chocolate chips (optional)

Instructions
Preheat oven to 350. Place bananas in a large bowl and mash with mixer. Stir in sugar and let stand for 15 minutes. Add applesauce and eggs, mix well. Add remaining ingredients and mix well. Pour into loaf pan coated with non-stick spray. (I usually make this in 4 small loaves so I can share!) Bake 30-45 minutes, or until top is golden brown and a toothpick inserted into center of loaf comes out clean. Remove from oven and let stand 10 minutes before removing from pan. Cool on wire rack.
The last few times I've made this without the nuts or chocolate chips and it was still yummy!!
