4 (8 oz) sea bass fillets
|
|
5 tomatoes, large chop
|
|
3 garlic cloves
|
|
4 oz feta cheese
|
|
1/4 c white wine
|
|
1 lemon, juice of
|
|
1 Tbsp dried oregano
|
|
5 Tbsp extra virgin olive oil
|
|
2 Tbsp unsalted butter
|
|
|
|
2 Tbsp chopped fresh basil
|
|
salt and pepper
|

Instructions |
|
|
Preheat oven to 400. Season both sides of bass with salt and pepper. Heat an oven-proof saute pan; add olive oil. Sear bass on both sides.
|

Add tomatoes, garlic, oregano, fresh basil, 2 oz of feta cheese, white wine and the lemon juice.
|
|
|
Bake at 400 for 15 minutes. Finish with butter, splash of wine and remaining feta cheese. Serve over rice or orzo.
